Spiced Plum Compote

Ingredients
- 1 Organic lemon
- 1.5 kg ripe firm plums
- 80 g brown coconut blossom sugar
- 500 ml gooseberry juice
- 2 Cinnamon sticks
- 3 Cloves
Instructions

Wash the lemon, dry it, grate the rind and squeeze out the juice.

Wash the plums, dry them, pit and quarter them. In a large pot caramelize the coconut blossom sugar over low heat, then deglaze with 500 ml water, gooseberry and lemon juice and bring to a boil.

Add cinnamon, cloves, lemon zest and plums; simmer for about 15 minutes on low heat.
