Lemon Ice Cream

Ingredients
- 5 lemons
- 450 g yogurt (full-fat or low-fat, optional)
- 150 g powdered sugar
- 4 egg whites
- a pinch of salt

Cut off a lid from the upper quarter of each lemon, carefully hollow it out with a teaspoon and use a potato masher to press juice from the pulp. Measure 200 ml of juice. In a bowl whisk yogurt with lemon juice and 50 g powdered sugar until creamy. Chill the mixture for about 1 hour.

Beat egg whites with salt until stiff peaks form; gradually fold in remaining powdered sugar until the meringue holds peaks. Fold the meringue into the yogurt-lemon mixture until evenly combined, pour into a running ice cream maker, and churn for about 35 minutes. Scoop the lemon ice cream into spheres, fill them into lemon shells, and serve each in a glass.
