Lemon Ice

Ingredients

  • 3 untreated lemons
  • 60 g sugar
  • 250 ml white wine
  • 1 Egg white

Instructions

    Wash one lemon with hot water, dry it, peel off thin zest and combine with sugar and wine in a pot, stirring until it boils. Then let it simmer for 5 minutes on a turned-off burner.

    Cool and strain through a sieve. Squeeze the remaining lemons. Beat the egg white to half‑firm peaks. Add lemon juice to the wine mixture, stir, then fold in the beaten egg white. Pour the mixture into ice molds and insert a wooden stick into each. Freeze for at least 3 hours.
