Ingredients
- 150 g sugar
- 0.125 l lemon juice
- 0.125 l lime juice
- 100 ml White wine
- 1 Egg white
- champagne (to top up)
- gooseberries (for garnish)
- mint (for garnish)

Cook the sugar with 5 tbsp water until syrupy, strain the lemon and lime juices through a sieve into the syrup, then stir in the wine.

Whisk the egg white to stiff peaks, fold it into the mixture. Pour into a shallow metal dish, and freeze while stirring occasionally. Once set, scoop individual spheres, place them in glasses, top with ice‑cold champagne, and garnish with a mint leaf and gooseberries.
