Lemon Cookies

Ingredients
- 200 g soft butter
- 1 untreated lemon
- 150 g sugar
- 3 egg yolks
- 50 g lemon zest
- 300 g flour
- 60 g cornstarch
- 2 tsp Baking powder
- 150 g lemon jam (or Lemon Crud)
- 200 g powdered sugar
- 2 tbsp lemon juice
- 50 g couverture chocolate
Instructions

Beat butter until fluffy. Grate the lemon rind and squeeze the lemon. Mix the juice and zest with the butter, sugar, and egg yolks. Finely chop the lemon zest with flour in a food processor and fold into the mixture with cornstarch and baking powder to form a smooth dough. Cover and refrigerate for 1 hour.

Preheat the oven to 180°C (350°F) fan‑forced.

Roll out the dough on a floured surface to about 4 mm thickness and cut out shapes of trees and mushrooms. Place on a parchment paper‑lined tray and bake for 10 minutes.

Heat jam in a saucepan, spread half of the cookies with it from below, then top with the remaining cookies. Let dry.

Whisk powdered sugar with lemon juice into a thick glaze and brush over the tops of the cookies. Optionally melt couverture chocolate into a small piping bag and spritz dots on top.
