Ingredients

  • 100 g sugar
  • 2 pears
  • 1 EL truffle oil
  • 2 EL grape seed oil
  • 2 EL white wine vinegar
  • 2 EL lemon juice
  • 1 TL honey
  • Salt
  • white pepper
  • 300 g goat fresh cheese (roll)

    Preheat the oven to 100°C fan.

    Bring the sugar with about 100 ml water to a boil and reduce to a syrupy consistency for about 5 minutes. Remove from heat and let cool slightly. Wash a pear and slice it into very thin wedges. Let the pears soak in the syrup for about 5 minutes, remove them and place on a baking tray lined with parchment paper. Dry in the oven for 1.5-2 hours.

    Whisk both oils with the vinegar, lemon juice, and honey, then season with salt and pepper. Peel, halve, and core the second pear, slice it thinly as well. Arrange the slices slightly overlapping on plates. Place the sliced cheese on top and drizzle with the vinaigrette. Serve garnished with pear chips.
