Lemon Cookies

Ingredients
- 125 g soft butter
- 150 g maple syrup
- 1 egg
- 200 g Flour
- 1 tbsp Cornstarch
- 75 g ground almonds
- 0.5 tsp Baking powder
- 150 ml buttermilk
- 2 lemons
- 25 g butter
- 60 g sugar
- 1 egg
- 100 g cream cheese

Preheat the oven to 180°C (350°F) with top and bottom heat.

Beat the butter with maple syrup until creamy, then stir in the egg. Mix flour with cornstarch, almonds, and baking powder; fold into the batter alternately with buttermilk. Drop spoonfuls of dough onto a parchment-lined tray and bake for about 15 minutes. Remove from the oven and let cool.

For the glaze, wash lemons hot, pat dry, and zest. Squeeze the juice. In a double boiler, combine butter, sugar, zest, and lemon juice; whisk until the butter melts. Beat in the egg and continue whisking over heat until creamy. Strain through a fine sieve, allow to cool slightly, then fold in cream cheese. Spread glaze on half of the cookies and top each with another cookie.
