Ingredients

  • 2.2 kg untreated lemons (yields about 1 l lemon juice)
  • 1 kg gelatin sugar (1:1)

Instructions

    Wash all lemons hot and dry rub them. Thinly peel the zest of three to four lemons into long, wide strips and then cut into fine strips. Squeeze all lemons, measure out 1000 ml lemon juice and add it with the lemon zest to a large pot, add the gelatin sugar and stir well.

    Bring to a boil over high heat while stirring constantly and simmer for 4 minutes, stirring continuously. Fill hot-washed jars to the brim and seal tightly.
