Lemon Tart

Ingredients
- 200 g Flour
- 100 g cold butter
- 1 pinch salt
- 1 tbsp cold water
- 4 eggs
- 150 g sugar
- 3 untreated lemons (juice and grated zest)
- 125 g butter

Quickly knead flour, finely chopped butter, salt, and 1–2 tbsp water into a shortcrust dough, shape into a ball, wrap in cling film and chill for about 1 hour.

Roll the dough on a floured surface to the size of your pan, line the greased pan with it, and trim the excess edge with a rolling pin.

Whisk eggs with sugar until frothy in a metal bowl, stir in lemon juice and grated zest, then add butter in small chunks; beat with an electric hand mixer over a hot water bath until thick and creamy.

Spread the filling onto the base, smooth, bake in a preheated oven at 200 °C for about 30 minutes, remove and let cool.

Plate the tart with pomegranate sauce, dust with powdered sugar, and arrange decorative sprigs on top.
