Ingredients
- 4 sheets white gelatin
- 3 large eggs
- 100 g sugar
- 1 lemon
- 250 ml Whipping Cream
- 1 handful seedless grapes
- 1 handful raspberries
- mint

Soak the gelatin. Whisk the eggs and sugar over a hot water bath until very frothy. Remove the gelatin from the water and squeeze out excess liquid. Add it to the cream and whisk further until dissolved in the warm mixture. Add lemon juice and zest. Take off the water bath and whip over a cold water bath. Beat the cream stiffly and gently fold into the egg mixture. Pour the fromage into small bowls and refrigerate.

Wash the grapes and halve them. Wash the raspberries and pat dry. Mix and spread both onto the fromage. Serve garnished with mint leaves.
