Lemon Cream

Ingredients

  • 4 lemons (juiced)
  • 2 tsp grated lemon zest (unprocessed)
  • 6 gelatin sheets
  • 250 g whipping cream
  • 400 g buttermilk
  • 75 g powdered sugar
  • 3 lemons
  • 2 tbsp honey
  • 40 ml limoncello
  • white chocolate (shaved)

Instructions

    Carefully cut the three lemons (including white rind) into cubes. Boil honey and limoncello with 4 tbsp water, add lemon pieces, remove from heat and let cool. Transfer to six bowls.

    Soak gelatin in cold water. Whip cream until half-stiff.

    Whisk buttermilk with lemon juice, zest, and powdered sugar. Dissolve gelatin in a small pot over low heat, pour into buttermilk mixture, stir gently. Fold in whipped cream. Pour over lemons and chill for at least 2 hours. Sprinkle with white chocolate before serving.
