Lemon Chicken with Rosemary

Ingredients
- 2 small chickens
- 4 sprigs Rosemary
- 2 untreated lemons
- 8 garlic cloves
- Salt
- Pepper (freshly ground)
- 4 tbsp olive oil
- 120 ml white wine
- 120 ml poultry stock
- 50 ml lemon juice
- 80 g Black olives
- sugar
- 80 g grapes

Separate the chicken pieces, wash and pat dry. Wash the rosemary, shake off excess moisture, and pluck individual needles from the stems. Slice the lemons into rounds and crush the garlic.

Season the chicken parts with salt and pepper. Heat oil in an oven-safe dish and brown the chicken all around. Add the lemon slices and crushed garlic, sauté briefly until they take on some color.

Deglaze the chicken with wine, poultry stock, and lemon juice; then add rosemary and olives. Cover and simmer for 25 minutes. Taste the sauce with salt, pepper, and a touch of sugar, fold in the grapes, and serve with ciabatta if desired.
