Lemon Chicken

Ingredients
- 4 chicken thighs
- Salt
- Pepper (freshly ground)
- 250 ml poultry stock
- 800 g small potatoes
- 400 g small onions
- 1 tbsp honey
- 1 tbsp sherry
- 3 tbsp oil
- 3 lemons
- 1 bunch Basil

Wash and pat dry the chicken, then cut into pieces.

Heat one lemon, grate its zest, mix half of the zest with 1 tbsp oil, a pinch of salt and pepper, and rub this mixture over the chicken.

Slice the remaining lemons into rounds.

Wash and peel the potatoes, halve or leave whole the onions depending on size. Place the vegetables and chicken in a fireproof dish and roast in a preheated oven at 200°C for about 30-40 minutes, adding lemon slices. Gradually pour in the stock during roasting and occasionally baste the chicken with the pan juices.

Remove the chicken from the oven. Whisk honey, sherry, remaining lemon zest and 1 tbsp oil together. Brush the chicken with this glaze and place skin side up on a rack or sheet at 250°C for about 5 minutes to crisp. Wash basil and finely chop everything except two sprigs; fold 2/3 of it into the vegetables. Arrange the chicken over the vegetables, sprinkle with basil, garnish and serve.
