Lemon‑Herb Chicken Skewers

Freshly marinated chicken skewers with aromatic lemon grass and zesty lime garnish from Spoonsparrow.
Ingredients
- 600 g Chicken breast fillet
- 2 Eggs
- 3 tbsp breadcrumbs
- 1 tsp grated lemon zest
- Pepper
- Salt
- 0.5 tsp Curry Powder
- 1 tsp Mustard
- lime wedge (for garnish)
- ready‑made curry sauce (to serve)
- 12 stalks lemon grass
Instructions

Process the chicken breast through a meat grinder. Mix with eggs, lemon zest, breadcrumbs, salt, pepper, curry powder and mustard to form a cohesive mixture.

Season, divide into 12 portions and press each onto a lemon grass stick using your hands. Grill on all sides for about 5 minutes until cooked through. Serve with lime wedges and curry sauce.
