Ingredients

  • 8 chicken thighs (prepped)
  • Salt
  • black pepper (freshly ground)
  • 2 tbsp olive oil
  • 2 Garlic cloves
  • 1 tbsp capers (jarred)
  • 6 sprigs Thyme
  • 4 tbsp passata
  • 1 untreated lemon (sliced)
  • 200 ml dry white wine
  • 250 ml poultry stock

    Wash the thighs, pat dry, season with salt and pepper, then brown all sides in a hot pan with oil.

    Peel and finely chop the garlic; add it along with capers, thyme, passata, and lemon slices. Deglaze with wine and stock, simmer over medium heat for about 25 minutes, adjust seasoning, and serve.
