Ingredients
- 4 chicken breast fillets (about 150 g each)
- Salt
- Pepper (freshly ground)
- 1 lemon (juice)
- 4 tbsp flour
- 2 Eggs
- 4 Tbsp breadcrumbs
- 6 tbsp clarified butter
- 1 bunch chopped parsley
- lemon zest (for serving)
Instructions

Wash and pat dry the chicken breasts, then slice them diagonally into thin cutlets.

Season the meat with salt, pepper, and drizzle with lemon juice. Dredge in flour, dip through beaten eggs, and coat lightly with breadcrumbs, pressing gently to adhere.

In not-too-hot clarified butter, fry portions until golden brown on both sides (about 2 minutes per side), then remove and drain on paper towels.

Fry the parsley briefly in the remaining hot fat for a few seconds (beware of splatter!), then drain.

Serve all together immediately with lemon wedges.
