Ingredients

  • 1 chicken
  • 800 g potatoes
  • 2 tomatoes
  • 3 garlic cloves
  • 2 Stiele rosemary
  • 1 lemon (organic, to taste)
  • 100 ml white wine (dry)
  • 150 ml poultry stock
  • salt
  • pepper
  • paprika peppers

Instructions

    Divide the chicken into 6-8 pieces, season with salt and pepper, and lightly coat with paprika. Peel and cut potatoes into wedges, blanch briefly. Peel garlic cloves and crush slightly. Tear three rosemary sprigs into smaller pieces. Blanch tomatoes, peel, core, and cut into 2 cm cubes.

    Place stock in a roasting pan and heat; add potatoes, arrange chicken pieces on top. Wash lemons, grate zest finely, and squeeze juice. Sprinkle zest over three chicken pieces, drizzle with juice, add garlic cloves and rosemary. Roast in oven at 200°C (lower rack) for about 30 minutes. Baste occasionally with wine. After the initial baking time, add tomato cubes and bake another 10 minutes, covering with foil if needed.
