Lemon Chicken

- 1 chicken
- 1 untreated lemon
- 2 Garlic cloves
- 6 sage leaves
- 1 tbsp butter
- 1 tbsp Olive Oil
- Salt
- Pepper

Wash and pat dry the chicken inside and out. Mix salt and pepper on a plate, rub the chicken inside and out with it. Grate the zest of one lemon, cut in half and juice half. Peel the other half and finely chop the flesh. Peel garlic and finely chop. Mix lemon cubes with garlic and 4 chopped sage leaves and stuff the chicken with this mixture, securing well with toothpicks.

Melt butter and mix with olive oil, lemon zest and remaining finely chopped sage leaves. Brush the chicken all over with this mixture and place breast down in a heat‑proof dish. Roast at 200°C for about 35 minutes. Drizzle the chicken with lemon juice and finish roasting breast up for another 15 minutes.
