Lemon Chicken

- 3 untreated lemons
- Olive oil (for greasing)
- 1 tbsp liquid butter
- 1 tbsp Olive Oil
- 1 chicken (about 1.2 kg)
- 3 Garlic cloves
- 1 sprig rosemary
- Salt
- pepper (ground)

Preheat the oven to 180°C (356°F) with top and bottom heat. Wash lemons hot, dry them, cut two into slices and place in a greased roasting pan. Squeeze out juice from the third lemon and mix it with warm liquid butter and oil. Rinse the chicken, pat dry, and tie it with kitchen twine.

Prick all around the chicken at regular intervals with a small knife. Peel and crush the garlic cloves. Rinse rosemary, shake dry, and tear into small pieces. Rub the chicken with salt and pepper, then pierce it with rosemary and garlic.

Place the chicken breast-side up in the pan. Spread some lemon butter over it and roast for about 1.5 hours. Occasionally baste with more lemon butter and drizzle with the collected juices.
