Ingredients

  • 2 untreated lemons
  • 4 Garlic cloves
  • 2 onions
  • 1 chicken (ca. 1.2 kg)
  • Salt
  • Pepper
  • 1 tbsp Olive Oil
  • 5 sprigs thyme
  • 250 ml chicken stock

Instructions

    Preheat the oven to 180°C with fan and conventional heat.

    Rinse the lemons under hot water, dry them, rub them, and slice into rounds. Press the garlic cloves. Peel the onions and cut them lengthwise into wedges.

    Rinse the chicken, pat it dry, and divide it into eight pieces. Season with salt and pepper and brown all sides in a hot pan with olive oil. Remove the chicken and place it with the onions, garlic, and lemon slices in a baking dish. Sprinkle thyme over the top and pour some chicken stock. Bake for about 35 minutes until golden brown, basting occasionally and adding more stock if needed.
