Ingredients
- 1.5 stalks leek
- 350 g onions
- 2 tbsp butter
- Salt
- Pepper (freshly ground)
- 1 tsp sugar
- 100 ml dry white wine
- 800 ml vegetable broth
- 1 tbsp coriander seeds (coarsely crushed)
- white wine vinegar
- 1 tbsp freshly chopped parsley

Halve the leeks lengthwise, rinse, clean and cut into 1 cm wide strips. Peel and halve the onions, then slice them into thin rings. In a pot melt the butter and sauté the onions with the leeks. Season with salt, pepper, and sugar, and gently simmer for about 10 minutes while stirring.

Add the wine and broth, stir in the spices, and let it cook for another 10-15 minutes. Finish with a splash of vinegar, stir in the parsley, and serve in bowls.
