Ingredients

  • 150 g long grain rice (mixed)
  • 150 g wild rice (mixed)
  • 2 stalks leeks
  • 200 g Cherry tomatoes
  • 1 bunch mint
  • Juice of 1 lime
  • 1 tsp Honey
  • 2 tbsp olive oil
  • 1 tbsp grape seed oil
  • Salt

Instructions

    Cook the rice according to package instructions, then let it cool.

    Wash and trim the leeks, slice into rings. Wash the tomatoes and halve them. Pick mint leaves and roughly chop them.

    Whisk lime juice with honey and oils. Season with salt. Toss all ingredients with the dressing and serve.
