Ingredients

  • 1 pear
  • 1 bundle young spinach
  • 1 bundle arugula
  • 0.5 bundle chives
  • 0.5 radicchio
  • 100 g blue cheese
  • 50 g walnuts (coarsely chopped)
  • 3 tbsp apple cider vinegar
  • 1 tbsp nut oil
  • 2 tbsp sunflower oil
  • Salt
  • 1 tbsp honey

Instructions

    Wash the pear, halve it, remove the core and slice into thin strips.

    Wash and trim the spinach and arugula, removing tough stems and draining well.

  3. 3.

    Cut the chives into ~5 cm long ribbons.

    Wash the radicchio, trim and tear into bite‑size pieces.

    Whisk together vinegar, oils and honey to make a dressing; season with salt.

    Arrange the greens on plates, top with pear slices, crumble cheese over them, drizzle with dressing, then sprinkle chives and walnuts before serving.
