Cucumber Cold Soup with Shrimp

A refreshing cucumber cold soup featuring fresh shrimp, served by Spoonsparrow.

Ingredients

  • 2 cucumbers
  • 1 Garlic clove
  • handful basil
  • 5 dill sprigs
  • 400 g yogurt
  • Salt
  • Pepper (freshly ground)
  • pinch sugar
  • 0.5 lemon (juice)
  • 8 large shrimp (prepped, deveined and peeled except for the tail segment)
  • 1 tsp Paprika powder (sweet)
  • vegetable oil (for frying)

    Taste the soup and ladle into bowls. Place two shrimp on top of each bowl and garnish with remaining herbs before serving.
