Ingredients

  • 150 g honey
  • 150 g brown sugar
  • 60 g Butter
  • 350 g flour
  • 0.5 tsp Lebkuchengewürz
  • 1 tsp Baking Soda
  • 1 egg
  • 2 egg whites
  • 400 g powdered sugar
  • food coloring (optional)
  • Turkish honey
  • chocolate sprinkles
  • Chocolate bars
  • waffle rolls

Instructions

    Heat the honey, brown sugar and butter together until the sugar dissolves, then set aside to cool. Mix the flour with Lebkuchengewürz, dissolve the baking soda in 2 tbsp water and add it. Beat the egg, combine with the honey mixture and knead well with the flour. Wrap the dough in cling film and refrigerate overnight.

    Preheat the oven to 180°C fan. Line one baking tray (30x40 cm) with parchment paper.

    Divide the dough into two halves and roll each to the size of a tray. Place on trays and bake for about 15 minutes.

    Cut from a sturdy cardboard two rectangles (~15x20 cm) and two isosceles triangles with side lengths of 15 cm. Cut figures, chimneys or trees from the leftover dough as desired.

    Place all house parts onto freshly baked Lebkuchen dough immediately (the dough must still be hot, otherwise it cracks when cutting). Don’t forget windows and doors, and add a rectangle (~20x15 cm) as the base.

    Let the cut pieces cool on a cooling rack. Meanwhile make the icing or glue: beat the egg whites until stiff, gradually whisk in powdered sugar to form a thick glaze. Color if desired. Outline doors and windows with glaze using a piping bag.

    Glue the house sides together with glaze and decorate the edges with more glaze.

  8. 8.

    Brush the roof with a little glaze and decorate everything as you wish with Turkish honey, chocolate sprinkles, chocolate bars and waffle rolls. Let it dry well.
