Cheese Berry Cake

- 200 g butter cookies
- 2 tbsp sugar
- 0.5 tsp ground cinnamon
- 75 g butter
- soft butter (for greasing the pan)
- 700 g double cream cream cheese
- 175 g sugar
- 6 Eggs
- 400 g sour cream
- 3 tbsp cornstarch
- 2 tsp real bourbon vanilla
- 1 tbsp Lemon Juice
- 1 tbsp grated lemon zest
- 150 g raspberries
- 150 g blueberries
- 200 g raspberry jam

Crush the cookies in a food processor or plastic bag with a rolling pin. Mix crumbs with sugar and cinnamon. Melt butter in a saucepan, combine with cookie crumbs. Grease pan with butter, pour crumb mixture into it, spread evenly and press down slightly. Chill in refrigerator. For filling, beat cream cheese with sugar. Separate eggs; add yolks one at a time to the cream cheese, then stir in sour cream until well combined.

Preheat oven to 200°C (400°F). Stir cornstarch, vanilla, lemon juice and zest into the cheese mixture. Whisk egg whites to stiff peaks and fold gently into the batter.

Pour batter into a 28 cm springform pan and smooth top. Bake for about 1 hour. When it starts to brown, cover with parchment paper. Turn off oven, leave cake in half-open door for another 15 minutes. Best left to rest overnight before releasing the springform rim and slicing.

Heat jam, strain if desired, spread over cake, then scatter washed berries on top for garnish.
