Ingredients
- 125 g honey
- 60 g sugar
- 50 g butter
- 250 g flour
- ginger (2 tsp ground)
- cinnamon (2 tsp ground)
- 0.5 tsp cloves powder
- 1 tsp anise powder
- Pinch Salt
- 1 tsp potash
- 1 tsp deer horn salt
- 1 tbsp milk
- 50 g candied orange peel
- couverture chocolate (dark and white)

Heat honey with sugar and butter, dissolve the sugar, then let it cool slightly. Dissolve potash and deer horn salt sequentially in the milk. Mix sifted flour and spices together and stir into the honey mixture along with the leavening agents. Finely chop candied orange peel and fold into the dough. Refrigerate overnight.

Roll dough on a floured surface, cut into small squares (bear-sized). Place for 10 minutes in the freezer. Then lay a bear template over each square and cut bears with a sharp knife. Bake in a hot oven. Decorate as desired once cooled.
