Lebkuchen with Sugar Glaze

Ingredients
- 150 g butter
- 250 g honey
- 250 g brown sugar
- 100 g Ground Almonds
- 450 g flour
- 1 tsp cinnamon powder
- 2 tsp gingerbread spice
- 1 tsp lemon zest
- 1 egg
- 1 tsp potash
- 2 tbsp rum
- 250 g powdered sugar
- 4 tbsp Lemon juice
- colorful food coloring (red, yellow, green)
- sugar pearls
- sugar stars
Instructions

Add butter in pieces with honey and sugar to a saucepan and heat while stirring until the sugar dissolves. Transfer to a large mixing bowl and let cool. Then add almonds, 400 g flour, all spices, and egg; knead thoroughly with a hand mixer (kneading attachment), adding more flour if needed. Mix potash with rum in a small bowl until smooth; add to dough and continue kneading until the dough shines and no longer sticks.

Cover the bowl with plastic wrap and refrigerate overnight.

Preheat the oven to 180°C fan.

Line a baking tray with parchment paper. Roll out the dough on a floured surface, cut shapes (e.g., fir trees, rocking horses) or use cutters. Place on the tray and bake for 15-20 minutes, then carefully lift from the tray. Cool on a wire rack.

Whisk powdered sugar with enough lemon juice to make a thick glaze. Color part of the glaze with food coloring. Brush gingerbread with glaze and decorate with sugar pearls and stars. Use a small squeeze bottle to add white glaze details. Let fully dry.
