Lebkuchen vom Blech
Spoonsparrow presents: Lebkuchen vom Blech – for the festive treat you need neither paper sheets nor cutters!
Ingredients
- 40 g orangeat
- 40 g zitronat
- 250 g flour
- 75 g ground hazelnuts
- 75 g ground almonds
- 100 g chopped almonds
- 3 tsp gingerbread spice
- 50 g cocoa powder
- 4 eggs
- 40 ml rum
- 2 tbsp vanilla sugar
- 250 g brown sugar
- 3 tbsp powdered sugar (for dusting)

Blend orangeat and zitronat with 1 tbsp flour in a food processor until finely crushed. Mix the ground nuts with remaining flour, almonds, gingerbread spice, and cocoa. Stir in the orangeat and zitronat mixture. Whisk eggs with rum, vanilla sugar, and brown sugar until frothy.

Fold the nut-flour blend into the froth well. The dough should be spreadable but not too liquid; add more flour if needed. Line a baking sheet with parchment paper. Pour the dough onto the sheet and smooth it out evenly.

Bake the gingerbread on a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 20–25 minutes. Remove, lift from the sheet with parchment, and cool. Dust with powdered sugar and cut into pieces to serve.
