Ingredients
- 300 g rye flour (Type 997)
- 120 g sugar
- 50 g ground almonds
- 0.5 tsp cinnamon powder
- 1 pinch nutmeg
- 1 tsp Lebkuchengewürz
- 20 g candied orange peel
- 150 g honey
- 1 egg
- 1 egg yolk
- 4 g baking soda
- 4 g salt
- 100 g powdered sugar
- 1 tbsp Lemon Juice

Preheat the oven to 180°C with fan and top/bottom heat.

Put flour, sugar, almonds, cinnamon, nutmeg and Lebkuchengewürz into a bowl, mix and make a well in the center. Finely chop the orange peel and add it with honey, egg and yolk into the well. Mix baking soda with salt and 2 tbsp cold water and add to dough ingredients. Knead everything into a smooth, shiny dough, adding more water if needed. Roll out the dough about 1 cm thick and cut conifer shapes. Place them on a parchment‑lined tray with enough space between each. Bake in the oven for about 20 minutes.

Let the finished Lebkuchen cool on a cooling rack.

For the glaze whisk powdered sugar and lemon juice into a thick pourable mixture. Use it to dust the conifers like snow.
