Gingerbread Figures

Ingredients
- 125 g liquid honey
- 60 g sugar
- 50 g butter
- 250 g flour
- 2 tsp ginger powder
- 2 tsp Cinnamon
- 1/2 tsp anise powder
- 1/2 tsp clove powder
- 1 pinch salt
- 1/4 tsp potash
- 1/4 tsp deer horn salt
- 75 g powdered sugar
- water

Heat honey, sugar and butter until the sugar dissolves, then let cool.

Mix flour and spices together.

Dissolve potash and deer horn salt in the syrup and combine with the remaining ingredients; cover and refrigerate overnight.

Roll the dough to about 4-5 mm thickness on a lightly floured surface. Cut out gingerbread figures with a suitable cutter or sharp knife, place on parchment-lined baking sheets and bake in a preheated oven at 180°C for about 15 minutes until golden brown. Remove and let cool.

Whisk powdered sugar with enough water to make a creamy glaze. Fill into a small freezer bag, cut a tiny hole in one corner, then decorate the gingerbread figures and allow the glaze to dry.
