Ingredients
- 175 g liquid honey
- 2 Eggs
- 175 g cane sugar
- 1 lemon (juice and zest)
- 400 g flour
- 1 packet baking powder
- 1 tsp cinnamon
- 0.5 tsp cloves powder
- 1 tsp ground coriander
- powdered sugar for sheet
- baking discs 8 cm diameter
- halved shelled almonds
- halved red cocktail cherries
- 4 tbsp powdered sugar
- 2 tbsp lukewarm water

Whisk eggs with sugar until frothy. Add lemon zest and juice, continue whisking until thickened, then stir in honey. Mix flour with baking powder and spices, fold into the honey mixture. Let dough rest briefly. Spread dough onto baking discs with a warm knife.

Place Lebkuchen on baking sheets, dust with powdered sugar, and refrigerate overnight in a cool dry place.

The next day decorate Lebkuchen with almond halves and cherries, bake in preheated oven at 150°C for about 25 minutes. Mix powdered sugar with water and glaze hot Lebkuchen while still warm. The glaze should be slightly milky and translucent.
