Lebanese-Style Quinoa Salad (Tabbouleh)

Quinoa salad in Lebanese style is a perfect fitness recipe – quick to make, healthy and made with fresh ingredients.

Ingredients

  • 200 g Quinoa
  • 400 ml Vegetable broth
  • 2 Tomatoes
  • 2 Spring Onions
  • 5 sprigs parsley
  • 3 tbsp Lemon juice
  • 4 tbsp olive oil
  • Salt
  • ground pepper

Instructions

    Add quinoa and vegetable broth to a pot, bring to a boil and simmer over medium heat for about 15 minutes, stirring occasionally.

    Wash the tomatoes, quarter them, remove seeds and dice finely. Rinse the spring onions, trim and slice into thin rings. Wash the parsley, shake dry and finely chop the leaves. Mix quinoa with tomatoes, spring onions, parsley, lemon juice and olive oil, then season with salt and pepper.

    Arrange in a bowl and garnish with fresh herbs as desired.
