Bulgur Eye-Catching Salad

Ingredients

  • 250 g bulgur
  • 3 tbsp Lemon juice
  • 500 ml vegetable broth
  • 300 g tomatoes
  • Salad cucumber
  • 1 Red Onion
  • spring onions
  • 2 tbsp Basil pesto (jar)
  • 1 tbsp finely chopped parsley
  • 1 tbsp finely chopped mint
  • Salt
  • Pepper
  • 1 tbsp Olive Oil
  • 2 tbsp white wine vinegar
  • 8 small mini mozzarella balls
  • 8 black pitted olives

Instructions

    Bring bulgur with lemon juice and broth to a boil, then cover and let it soak for 20–30 minutes.

    Meanwhile wash tomatoes, quarter them and dice the flesh. Peel cucumber, scoop out seeds with a spoon, and dice the flesh small.

    Peel onion and dice it as well. Wash spring onions, trim them and slice into rings.

    Break bulgur slightly with a fork to loosen it. Mix with vegetables, pesto, herbs, salt, pepper, olive oil and vinegar. Let it rest for 30 minutes.

    Fill salad into small bowls. Drain mozzarella. Press one olive into each ball as an eye pupil and distribute over the salad. Serve eye-catching bulgur salad.
