Ingredients

  • 500 g filo dough
  • 60 g Butter
  • 1 tsp starch
  • fat for the pan
  • 2 egg whites
  • 300 g sugar
  • 200 g chopped walnuts
  • 200 g chopped almonds
  • 3 tbsp rose water
  • 1 tbsp Lemon Juice
  • 2 tbsp chopped pistachios

Instructions

    Unfold the dough sheets and cover with a cloth. Place a second damp cloth on top and let the dough rest for about 15 minutes.

    Melt the butter. Dust the work surface with starch in an area roughly the size of the dough. Place one sheet on the starch and brush with some butter. Brush each sheet in turn and stack them. Using a long knife, cut the stack into squares about 8x8 cm.

    Grease a round baking pan (about 26 cm diameter). Preheat the oven to 180°C fan.

    Beat the egg whites until stiff, letting 50 g sugar fall in. Fold in the chopped nuts and 1 tbsp rose water. Spoon 1–2 tbsp of the mixture onto each dough square, fold the corners together, and arrange side by side in the pan.

    Bake in the preheated oven for 35–40 minutes until golden brown.

    Meanwhile, reduce the remaining sugar with 350 ml water to a syrup for about 15 minutes. Stir in the lemon juice and remaining rose water, then let cool. Remove the pastry from the oven, soak it with the syrup, sprinkle with pistachios, and serve hot or cold.
