Chocolate Nut Rolls from Filo Dough

- 1 red chili pepper
- 250 g sugar
- 200 g filo dough
- 100 g liquid butter
- 200 g dark chocolate couverture
- 200 g chopped nuts (e.g., hazelnuts, walnuts, almonds)

Preheat the oven to 200°C with upper and lower heat. For the syrup wash, halve, seed, and finely chop the chili pepper. Bring 250 ml water with sugar and chopped chili to a boil and simmer until bubbling until the sugar dissolves. Remove from heat and let cool. Spread filo dough on a work surface, brush with butter, and top with another filo sheet. Roughly chop chocolate and melt over a double boiler. Add nuts and stir.

Cut the filo into 24 squares (10x10 cm) and place 1 tsp of the mixture in the center of each. Fold the opposite sides toward the middle and roll up the filo. Thread the rolls onto wooden skewers, place on a parchment-lined baking tray, and bake in the preheated oven for about 10 minutes until golden yellow. Remove, turn in the syrup, and serve.
