Ingredients
- 4 small beetroot
- 1 romaine lettuce
- 150 g arugula
- 1 small can Chickpeas
- 200 g mushrooms
- 4 Carrots
- 250 g cocktail tomatoes
- 3 tbsp red wine vinegar
- 1 tbsp liquid honey
- 6 tbsp Olive oil
- Salt
- Pepper
Instructions

Wash the beetroots, simmer in boiling salted water for 10 minutes, remove, peel, cool, and cut into thick slices; drain chickpeas. Wash lettuce and tear into bite-sized pieces.

Wash arugula. Wash tomatoes and halve them. Peel carrots, cut into large chunks, blanch in boiling salted water for 3 minutes, then drain. Mix all salad ingredients. Whisk the listed dressing ingredients together and drizzle over the salad.
