Head lettuce with boiled eggs and capers

A fresh salad featuring head lettuce, boiled eggs, radishes, apples, spring onions, and capers in a creamy yogurt dressing. Try this and other recipes from Spoonsparrow!

Ingredients

  • 1 head lettuce
  • 4 eggs
  • 100 g radishes
  • 1 apple
  • 2 Spring Onions
  • 2 tbsp capers
  • chives sprigs (for garnish)
  • 200 g yogurt
  • 2 tbsp balsamic vinegar
  • 1 tsp horseradish
  • a pinch sugar
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper (freshly ground)

Instructions

    Wash, trim and tear the lettuce as needed.

    Boil the eggs until hard, cool, peel and quarter them.

  3. 3.

    Wash, trim and slice the radishes into thin rounds.

  4. 4.

    Peel the apple, quarter it, remove the core and cut into strips.

  5. 5.

    Wash the spring onions, trim them; cut the white parts into rings and the green parts into sticks.

  6. 6.

    Arrange all ingredients decoratively on four plates.

    Whisk yogurt with all other dressing ingredients until smooth; add a little water if needed and season. Drizzle over the salads, sprinkle capers, and serve garnished with chives.
