Fruitful Rice Salad with Yogurt Sauce

Ingredients
- 300 g yogurt
- 250 g long grain rice
- 3 tomatoes
- 3 spring onions
- 1 Mango
- 2 tbsp chives rolls
- juice of 1 lemon
- 1 tbsp chopped roasted pistachio nuts
- parsley
- 2 tsp Curry powder
- Salt
- Pepper (from the grinder)

Wash rice under running water in a sieve, bring to a boil with slightly more than double the amount of lightly salted water and cover over low heat for about 25 minutes until drained.

Wash, peel and dice tomatoes. Trim spring onions and cut white and light green parts into rings. Place rice with tomatoes, spring onions, chives and parsley in a bowl. Mix yogurt with lemon juice and curry powder, season with salt and pepper, then stir into the salad. Cover the bowl and let it rest in the refrigerator for about 1 hour.

For serving peel mango, separate flesh from pit and cut into 8 wedges. Taste the salad again and garnish each small bowl with two mango wedges.
