Ingredients
- 2 small zucchini
- 16 small boiled potatoes (from yesterday)
- 100 g mixed salad leaves (optional)
- 3 Stalks Parsley
- 2 stalks tarragon
- 400 g smoked mackerel
- 1 stalk basil
- 5 tbsp white wine vinegar
- 3 tbsp olive oil
- 2 tbsp vegetable broth
- Salt
- Pepper

Wash, trim and cut zucchini into 2 cm diagonal pieces. Blanch in boiling salted water for 2 minutes, drain and shock with ice water. Halve the potatoes. Wash salad leaves, shake dry and tear into bite‑sized pieces if desired. Wash herbs, shake dry and tear small. Tear mackerel into pieces.

Wash basil, shake dry and leave whole leaves uncut. Mix with remaining dressing ingredients. Gently fold in the rest of the salad components. Divide onto four plates and serve.
