Ingredients
- 1 head endive lettuce
- 250 g shrimp
- 2 tbsp Lime juice
- 1 Avocado
- 150 g small mushrooms
- 4 cooked potatoes (from yesterday)
- 2 shallots
- 2 tbsp white wine vinegar
- 6 tbsp vegetable oil
- salt (pepper)
- 1 bunch chives

Clean, wash and dry the salad; tear into bite‑size pieces. Wash shrimp and pat dry. Peel potatoes and slice thinly. Peel avocado, halve, remove pit, cut into fine strips, mix with shrimp and drizzle immediately with lime juice. Clean mushrooms, trim thick stems, finely slice.

Peel shallots and finely chop. Whisk vinegar, oil, salt and pepper to make a dressing; fold in shallots. Combine all ingredients, arrange on plates, drizzle with dressing. Slice chives into fine ribbons and sprinkle on top.
