Ingredients
- 1 head endive lettuce
- 4 tomatoes
- 1 tsp fresh oregano (chopped)
- 2 tbsp balsamic vinegar
- 4 Tbsp sunflower oil
- 1 tbsp honey
- 1 tbsp Lemon Juice
- 2 tbsp sunflower seeds
- 4 small goat cheese wedges
- 4 slices whole-grain toast
- Salt
- Pepper
Instructions

Wash and dry the lettuce, then cut into fine strips.

Wash tomatoes, quarter them, remove seeds and pulp, dice finely. Whisk together vinegar, lemon juice, oil, honey, oregano, salt, and pepper to make a dressing.

Toast sunflower seeds in a pan without added fat until lightly browned.
