Ingredients

  • 2 oranges
  • 0.5 cucumber
  • 0.5 Red Onion
  • 150 g curly endive (or other leafy greens)
  • 2 tbsp white wine vinegar
  • Salt
  • Pepper (freshly ground)
  • 3 tbsp olive oil
  • 1 tbsp finely chopped parsley
  • Sesame grissini

Instructions

    Peel the oranges thoroughly with a sharp knife, removing the white pith. Cut fruit fillets from the separating membranes and catch the juice that drips out. Squeeze the juice from the orange scraps. Peel the cucumber if desired and slice it thinly. Peel the onion and cut it lengthwise into strips.

    Wash, rinse, dry, and tear the salad leaves as needed.

    Whisk vinegar, a pinch of salt, pepper, olive oil and 1–2 tbsp orange juice together; mix with cucumber, salad, parsley and onions; divide onto plates and arrange orange fillets on top.
