Ingredients

  • 150 g peas
  • 150 g sugar snap peas
  • Salt
  • 1 handful beet greens
  • 1 head oak leaf lettuce
  • 2 handfuls fresh herbs (e.g., parsley, mint, coriander leaves, chervil)
  • 150 ml orange juice
  • 1 tsp sharp mustard
  • 1 tsp Honey
  • 100 ml olive oil

Instructions

    Wash and trim the peas and sugar snap peas, blanch in salted water for 3-4 minutes until firm. Shock in cold water and cut diagonally into strips. Rinse the lettuce leaves and herbs, shake dry, remove any damaged parts and tear or chop into bite-sized pieces. Combine all prepared ingredients and divide among a large bowl or four small salad bowls.

    For the dressing whisk orange juice with mustard, honey and salt, then gradually stir in oil while whisking.
