Leafy Salad with Avocado, Tomatoes and Shrimp

Ingredients
- 1 iceberg lettuce
- 18 shrimp
- 1 Lime
- 5 tbsp olive oil
- 1 Garlic clove
- 2 Avocados
- 500 g tomatoes
- 1 small can pineapple
- 2 Spring Onions
- salt (pepper)
- 50 g tortilla chips

Mix 2 tsp lime juice with 2 tbsp oil and the crushed garlic clove. Wash shrimp, pat dry and add to the marinate.

Halve avocados, peel skin and cut flesh into pieces. Drizzle with lime juice. Wash tomatoes, halve them. Slice lettuce into thin strips. Catch pineapple juice, dice flesh. Trim spring onions and slice into fine rings. Combine all ingredients. Whisk remaining oil, 2 tbsp lime juice and 2 tbsp pineapple juice to make a sauce, season with salt and pepper. Remove shrimp from the marinate, quickly fry in a pan. Drizzle salad sauce over the salad, serve on plates and add warm shrimp. Garnish with tortilla chips.
