- 0.5 Vanilla pod
- 2 egg yolks
- 40 g sugar
- 15 g cornstarch
- 1 pinch salt

Instructions

Vanilla: Cut the vanilla pod lengthwise, scrape out the seeds and stir them into the milk; bring to a boil and remove from heat. Whisk the egg yolks with sugar in a bowl until creamy, then fold in the starch. Slowly pour the warm milk into the yolk mixture, return everything to the pot, remove the pod, and whisk over low heat until thickened, but do not boil!

Chocolate: Place milk in a pot and bring to a boil; stir in cocoa powder and remove from heat. Whisk egg yolks with sugar as before, fold in starch, then slowly add the warm milk to the yolk mixture, return to the pot, and whisk over low heat until thickened without boiling!

Hazelnut: Heat milk in a pot until boiling, stir in hazelnuts and nougat, remove from heat. Whisk egg yolks with sugar, fold in starch, then slowly add the warm milk to the yolk mixture, return to the pot, and whisk over low heat until thickened without boiling!

To layer, let each pudding cool slightly while stirring. Then carefully pour in layers into glasses, chill, and allow to set.
