Layered Cucumbers with Goat Cheese

Ingredients

  • 2 salad cucumbers
  • 20 g chives (1 bunch)
  • 250 g goat cheese
  • 250 g pitted black olives
  • 2 tbsp cold-pressed olive oil
  • Salt
  • Pepper
  • 1 Garlic clove

Instructions

    Wash and trim the cucumbers, cut each into three parts, then slice lengthwise into about 4 pieces approximately 1 cm thick.

    Wash the chives, shake off excess water, and cut into small rolls.

    Crumb the goat cheese. Finely chop the olives and mix with olive oil, salt, and pepper. Peel the garlic, dice finely, and combine with the olive mixture.

    Arrange eight cucumber slices on a plate. Layer with olives, add another cucumber slice, spread goat cheese, place chives rolls, and top with another cucumber slice. Serve 2 layered cucumbers per portion.
