Oat Cookies

The oat cookies from Spoonsparrow are easy to prepare and wonderful for gifting!

Ingredients

  • 1 Vanilla bean
  • 125 g butter (room temperature)
  • 100 g honey
  • 1 pinch salt
  • 1 egg
  • 200 g fine oat flakes
  • 75 g spelt whole‑grain flour
  • 1 tsp Baking powder

Instructions

    Slice the vanilla bean lengthwise and scrape out the seeds. Beat the vanilla seeds, honey, butter, salt, and egg with a hand mixer until fluffy. Mix in the oat flakes, spelt flour, and baking powder gradually into the butter mixture. Knead quickly into a smooth dough.

    Line a baking sheet with parchment paper. Form 40 small balls from the dough and place them spaced apart on the sheet. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for 10–15 minutes until golden yellow. Remove the oat cookies and cool on a wire rack.
