Ingredients
- 3 cloves garlic
- 1 onion
- 1 bunch thyme
- 4 tbsp olive oil
- salt, pepper from the mill
- 12 lamb rib chops
- juice of half a lemon
- 125 ml red wine

Peel and finely dice the garlic and onion. Rinse the thyme, set aside half, strip leaves from stems. Mix olive oil with garlic, onion, thyme leaves and pepper. Rub this mixture onto the lamb chops. Cover and let marinate for 1 hour.

Heat a pan. Brown the chops 2-3 minutes per side. Salt. Just before finishing, drizzle lemon juice and pour in red wine. Add remaining thyme to the wine sauce and let it reduce briefly. Season sauce with salt and pepper. Plate the lamb chops with the sauce and thyme.
