Lamb Chops with Baked Potato Slices

- 500 g potatoes, mostly waxy (4 potatoes)
- 2 Garlic cloves
- 1 small bunch thyme
- 1 Zucchini
- 4 tomatoes
- 600 g small rib chops (12 small rib chops)
- Salt
- freshly ground pepper

Wash potatoes thoroughly and cut them lengthwise into 1 cm thick slices. Heat 2 tbsp olive oil in a large non-stick pan. Quickly sear the potato slices over high heat. Peel and finely chop garlic. Rinse thyme and strip leaves from stems. Mix half the garlic and half the thyme with the potatoes and transfer to a baking dish. Bake in a preheated oven at 180°C (gas: level 2-3, convection: 160°C) for 20–25 minutes, turning occasionally.

Rinse zucchini, clean, and dice small. Rinse tomatoes and dice small.

Heat 2 tbsp olive oil. Sear lamb chops on both sides for 2–3 minutes. Season with salt and pepper and set aside warm.

Add remaining olive oil to the pan, cook zucchini and tomatoes for 3–4 minutes. Add remaining garlic and thyme. Season with salt and pepper. Season potatoes as well. Arrange everything together on plates.
